Physicochemical Property
The molecular formula is: (C6H10O5)n. It is a white to light yellow crystalline powder, odorless and sweet. The melting point is about 130°C. The pH value of a 10% aqueous solution is 2.5-7.0. The dietary fiber content is more than 90.0% based on dry matter. The energy value is 1 kcal/g, which is 4 times lower than sugar and 9 times lower than fat. It is well soluble in water, slightly hygroscopic, and safe to eat.
