Physicochemical Property
The chemical name is tripotassium 2-hydroxypropane-1,2,3-tricarboxylate, the molecular formula is K3C6H5O7, and the density is 1.98 g/cm3. Potassium citrate is a colorless crystal or white crystalline powder. It has a salty taste and no odor. It is easily soluble in water and almost insoluble in ethanol. It melts at 230 °С.

Potassium citrate, as a flavor enhancer, stabilizer, buffer, chelating agent, emulsifier, molten salt, acidity regulator, preservative, color stabilizer, thickener, retarder, surfactant, and antioxidant, is widely used in the food industry to produce candies, canned goods, bread baking, dairy products, and many other foods.
